Icumsa 600-1200 is 100% refined raw and is produced after the first crystallization of sugarcane. This sugar is thicker than white sugar, known as Icumsa 45, and its color is brownish. Raw sugar from cane sugar, when fully refined, is produced by directly boiling a sugar syrup by mixing white sugar with varying amounts of molasses. It is unrefined cane sugar from which the molasses has not been removed. Brown sugars tend to clump because they contain more moisture than white sugars, allowing baked goods to retain moisture well and remain chewy.
